You can always change up the vegetables and include ones that your family like.</div><div align="center"> </div><div align="center"><strong><span style="font-family:arial;"></span></strong></div><div align="center"><strong><span style="font-family:arial;">Winter Roasted Vegetable Soup<br /></span></strong><br />6 carrots, peeled and sliced<br />2 stalk celery, thinkly sliced<br />2 turnips, peeled and diced<br />1/2 pint Brussel spouts, cut in quarters<br />3 quarts vegetable broth<br />1 cup canned plum tomatoes, chopped<br />salt and pepper<br />1 cup parsley leaves<br />1 clove garlic<br />2 tablespoons olive oil<br />1/4 cup grated Parmesan chees<br />Toss vegetables with olive oil, salt and pepper. Roast in 375 degree oven for about 45 minutes.<br />In a soup pot, combine the vegetable broth and the plum tomatoes. Bring to a boil<br /><br />Add parsley leaves, garlic, olive oil, and Parmesan cheese together. Put in blender or processor and puree. Set aside.<br /><br />When veggies are roasted, remove and transfer to the hot vegetable broth mixture. I use about 5)<br />½ cup Parmesan cheese<br />¼ cup milk<br />1 tsp salt<br /><br />Cook potatoes in boiling water to cover 15 minutes or until tender. Drain and mash. Add butter and cream cheese. Beat at medium speed with an electric mixer till smooth. Stir in ½ cup Cheddar cheese and next 6 ingredients. Spoon into a lightly greased 11x7x1 ½ inch baking dish. Create a well in the middle of the mixture. In another bowl, whisk together eggs, pumpkin, and butter. Stir in butterscotch chips and pecans and pour into the well of dry ingredients. Fold together just until dry ingredients are moistened. Do not overmix. Spoon batter evenly into greased muffin tins. We enjoy salsa on burritos, enchiladas, and our favortite way; just with tortilla chips.<br /><br />Easy Salsa<br /><br />1 can (28 ounce) whole tomatoes with juice (I use the "no salt added" tomatoes)<br />2 cans (10 ounce) Rotel ( diced tomatoes and chilies) You can use mild, original, or one of each.<br />1/4 cup chopped onion<br />1 clove garlic, minced<br />1 whole jalapeno, cut and sliced thin<br />1/4 teaspoon sugar<br />1/4 teaspoon salt<br />1/4 teaspoon ground cumin<br />1/2 cup cilantro<br />1/2 whole lime (just the juice)<br /><br />Combine the whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a food processor.<br />Pulse until you get the desired consistency.
