With the Thanksgiving and Christmas holidays approaching, try this potato casserole for a special side dish. A good friend shared this with me and it
originally came from Southern Living years ago.
Holiday Potato Casserole

3 pounds potatoes, peeled and quartered
½ cup butter
2 – 3 ounce packages cream cheese softened
1 (4 ounces) shredded Cheddar cheese divided
1 (2 ounce) jar diced pimento drained
1 small green pepper, finely chopped
1 bunch green onions finely chopped (I don’t use a whole bunch. I use about 5)
½ cup Parmesan cheese
¼ cup milk
1 tsp salt

Cook potatoes in boiling water to cover 15 minutes or until tender. Drain and mash. Add butter and cream cheese. Beat at medium speed with an electric mixer till smooth. Stir in ½ cup Cheddar cheese and next 6 ingredients. Spoon into a lightly greased 11x7x1 ½ inch baking dish. Cover and chill if desired.

Remove casserole from refrigerator and let stand at room temperature for 30 minutes. Bake at 350° for 40 minutes or until thoroughly heated. Sprinkle with remaining Cheddar cheese and bake for 5 more minutes. (If you bake the casserole before chilling, the baking time will be less than 40 minutes.)
