Favorite Banana Bread

Favorite Banana Bread
Need a "happie" to take a new neighbor or a yummy breakfast item for a ladies' group?  Try this wonderful banana bread taken from Tables of Content out of Birmingham.  

Makes 2 (9-inch) loaves

1 1/2 cups whole wheat flour (regular is fine also)
1 t. baking soda
1/2 t. salt
 1 c. sugar
 1/2 c. (1 stick) butter, softened
1 c. mashed very ripe bananas (about 3 or 4 bananas)
1/2 c. sour cream
2 eggs
1 t. vanilla extract
1 t. ground cinnamon
1/2 cup chopped pecans (optional)

Preheat oven to 350 degrees.  Mix the flour, baking soda, and salt together.  Beat the sugar and butter in a mixing bowl at medium speed until blended, scraping the bowl occasionally.  Stir in the bananas, sour cream, eggs, vanilla, and cinnamon.  Add the flour mixture gradually, beating constantly just until blended.  Stir in the pecans.  

Spoon the batter into 2 greased and floured 5x9-inch loaf pans and bake for 50 to 60 minutes or until the tops are brown and the loaves test done.  Cool in the pans on a wire rack for 10 minutes.  Remove the loaves from the pans and cool completely on the wire rack.
