Party Chicken

Party Chicken
This recipe has been one of our family favorites for years.  When my children were teenagers, it was a staple in our weeknight menus, and to this day, they look forward to party chicken when they visit my home.  Party chicken is classic comfort food.

6 boneless, skinless chicken breasts
1 pkg bacon
1 jar Armour dried beef
1 family sized cream of mushroom soup 
16 oz. sour cream (not fat-free)
white rice

Cut chicken breasts in half lengthwise.  Wrap each half breast with one piece of bacon.  In a separate bowl, mix together mushroom soup and sour cream.  Spray a 9 x 13 glass dish with Pam and arrange dried beef to cover bottom of dish.  Place each bacon-wrapped piece of chicken on top of dried beef.  Pour soup mixture over chicken.  Cover and bake at 275 degrees for 3 hours.  Uncover the last 30 minutes or so.  
Cook white rice according to directions and serve chicken and gravy from baking over white rice.  

Add yeast rolls and green beans for a perfect comfort meal for your family.
