Cheese Wafers


This is a picture of my mother in 1984 preparing for her family to arrive for a holiday meal. My children were always filled with anticipation of getting to Woodville and seeing what goodies their Nonie had prepared. She always had snacks prepared ahead of time to nibble on before the big meal.

This Cheese Wafer recipe was one of my mother's favorites. The recipe came from my great Aunt Amanda.

Cheese Wafers:

1 stick unsalted butter
1 glass jar Old English Cheese
1 1/2 cups sifted flour
1/2 teaspoon cayenne pepper (1 teaspoon for more zing!)
1/2 teaspoon salt
few shakes of Lea and Perrins(optional)
few shakes of Tabasco (optional)
Bag of pecan halves

Mix together all ingredients with hands or the mixer. Make a roll and wrap in wax paper.(I grease the paper a little, first). Put in refrigerator to chill. After it chills,(you can
leave in refrigerator for days, even freeze). Slice roll into thin slices. Bake in slow oven-- 10 to 12 minutes at 275 degrees. Watch very carefully! Halfway through baking time, place a pecan half
on each slice.
***This recipe can be doubled or tripled easily.
