Baked Vidalia Onions

Baked Vidalia Onions
As an adult, every time my family visited my mama and daddy in Woodville, we always had steak on Saturday nights. My daddy loved baked onions with his steak. This recipe is an updated version of a family favorite side from Tables of Content....the Birmingham Junior League.
4 large Vidalia onions
1/4 cup (1/2 stick) butter, cut into 4 Tablespoons
1 t. salt
1/4 teaspoon pepper
1 cup (4 oz) freshly shredded Parmesan cheese
Preheat the oven to 400 degrees. Peel the onions, leaving the root end intact. Cut each onion into eighths, cutting to but not through the root end. Arrange each onion on a lightly greased piece of foil. Press 1 tablespoon of the butter into the center of each onion and sprinkle evenly with the salt, pepper, and cheese. Enclose the onions with the foil and seal tightly. Arrange the foil-wrapped onions in a 9x13-inch baking dish and bake for 1 hour or until tender.
